Some coffee lovers prefer their beans within 5-10 days of roasting, while others enjoy coffee up to several weeks old. The "optimal" window depends on your personal taste preferences and brewing method.

Why Oxygen is Coffee's Enemy ⚠️
Oxygen causes coffee (and all foods) to break down faster.
When coffee beans are exposed to oxygen, they undergo oxidation, which:
- Destroys delicate flavor compounds
- Makes coffee taste stale, flat, or cardboard-like
- Reduces aromatic oils that give coffee its smell and taste
- Happens faster with ground coffee than whole beans

Best Ways to Store Coffee

If you prefer transferring your coffee:
- Choose a container that's truly airtight (not just "tight-fitting")
- Opaque containers are better than clear (blocks light)
- Smaller containers are better than oversized ones (less air inside)
- Fill containers as full as possible to minimize air exposure

- Don't refrigerate or freeze coffee - It's scientifically unproven to help freshness and can introduce moisture
- Don't store near heat sources - Stoves, ovens, and sunny windowsills accelerate staleness
- Don't leave bags open - Reseal immediately after use
- Don't buy more than you can use in 2-4 weeks (or share with friends!)
What About Freezing Coffee?
The short answer: We don't recommend it.
While some people swear by freezing coffee, it's scientifically unproven to help maintain freshness. In fact, freezing can cause problems:
Potential issues with freezing:
- Moisture condensation when bringing frozen coffee to room temperature
- Absorption of freezer odors from other foods
- Freezer burn if not properly sealed
- Flavor degradation from repeated temperature changes
Exception: If you have a large quantity of coffee you can't use within a month, portion it into small airtight bags, freeze once, and thaw completely before opening.
How Long Does Coffee Stay Fresh?
In sealed, nitrogen-flushed packaging:
- Up to 1 year from roast date (though best within 3-6 months)
After opening:
- Whole beans: 2-4 weeks at peak flavor (still good for several months)
- Ground coffee: 1-2 weeks at peak flavor (degrades faster than whole beans)
Signs your coffee is past its prime:
- Weak or flat aroma
- Dull, cardboard-like taste
- No crema on espresso
- Lack of brightness or complexity
